Do you know that you can make an awesome jelly from dandelion flowers? • Some people call it Dandelion Jelly and some call it Poor Man’s Honey! • This jelly has become a family favorite of ours because it tastes so similar to honey with just a hint of lemon! • We use it on toast, biscuits, and even in tea as a replacement for honey sometimes! • This is a fun project for the whole family, as the dandelion flowers need gathering first-something our kids LOVE to help out with! • Dandelions pack a whole lot of vitamins and minerals into a small plant! • They’re probably even one of the most nutritionally dense green you can eat — even over kale or spinach! • But the greens are for another day! • Dandelion flowers are a great source of vitamins and minerals such as: Vitamins A, C and K Folate Calcium Potassium • Dandelions also provide antioxidants, reduce cholesterol, help regulate blood sugar, can reduce inflammation, and is said to lower blood pressure! • Though the sugar in this basically cancels all that out. 🤣🫶 • Keep scrolling down for the instructions and ingredients you need to make your own dandelion jelly! Ingredients: 2C dandelion petals (greens removed, lightly packed) 4C water 4C sugar 2 TBS lemon juice 1 box powdered pectin/1/8 cup of pectin Instructions: 1) Remove the green part of the petals and place 2C of petals into a quart jar/french press. 2) Pour 4 cups of hot water over the petals and allow to cool. You now made dandelion tea! 3) Strain the flowers well and squeeze out as much dandelion tea as possible! 4) Place 3.5-4 cups of dandelion tea into a large pot, along with the lemon juice and pectin. Bring to a boil. 5) Add sugar and return to a boil and hold the boil until jam is set. This time varies for several factors- so use the cold plate test method (check it out in our stories today if you need to know more!). This test always helps ensure I don’t fail a large batch of jelly/jam! 6) Remove from the heat and pour into canning jars if you want to can them.
