Some of the best moments start with a simple conversation. Chef Eric saw Barebones sharing photos from Montana and reached out while he was visiting. I live just outside Glacier National Park, Montana, and will always jump at a chance to cook outside, share stories, and make something meaningful, so we made a plan. We set out for two unforgettable nights. The first was by the lake. Two bison tomahawk steaks were hanging over open flames on the Cowboy Grill as storm clouds rolled in and out, shifting the light in wild, beautiful ways. Raindrops hit us here and there, but the storm always veered just past, leaving behind the kind of air that feels electric. In the distance, lightning split the sky while carrots hung over the flames of the Cowboy Grill with cast iron potatoes crisping beneath, the scent of cowboy butter and charred steak thick in the air. The second was by a quiet river winding through deep wild country. We cooked fresh trout and poured warm beurre blanc, a silky white wine butter sauce, over it just before serving. The last light drifted over the water and the alpine air cooled, friends now a little closer to each other by sharing the last bites of trout drenched in butter, wine, and smoke.
